It was one of those days when I was running short of time. I had to prepare a quick meal, as it was already lunch time and my son was about to come back from school. I contemplated ordering food from out, but eventually decided against it. Thought of just tossing veggies in rice when the idea of making a quick biryani struck me. Cooked the rice in the pressure cooker and simultaneously while that was happening, chopped veggies and sauteed them. Added curd, biryani masala and the cooked rice. Voila!! Biryani was ready! Thanked God for not letting me give in to the temptation of ordering food from out🙂

This is definitely not a party recipe, but more of a recipe when you are falling short of time or too tired to cook anything elaborate. Inspite of it being a quick recipe, it is quite tasty…

Ingredients

3 cups cooked basmati rice (I used regular rice)

2 carrots, peeled and cut lengthwise

2 potatoes, peeled and cut lengthwise

2 onions, peeled and cut lengthwise

1 cup frozen/ fresh green peas

( you can add any veggie of your choice like french beans, cauliflower, cooked corn etc, but dont skip on onions and potatoes. Cubed paneer/ tofu can also be added to enhance taste as well as add protein to the meal and make it a one pot meal)

3/4 cup curd

3-4 tbsp Biryani Masala ( have used Hakims as I prefer this brand for Mughlai recipes)

Salt ( some brands like Hakim already has it)

Oil

Chopped fresh coriander (optional)

Method

  1.  In a wok take generous quantity of oil. Sautee onions till red, then remove and sautee potatoes till half done. Then add all other veggies and let it cook till almost done.
  2. Add curd, biryani masala, cooked oninons and mix well. Once oil starts oozing out, add salt and cooked rice.
  3. Mix well. Switch off the flame and garnish with chopped coriander.
  4. It can be served with vegetable or boondi raita and papad.
